Cooking with Tanuja

Born and brought up in India, Tanuja has developed a passion for cooking and loves entertaining.  She is not just a normal housewife as she is a renowned Project Manager in Engineering Industry with Masters in Engineering from Monash University, Melbourne, Australia and having graduated her Bachelors in Energy Engineering from the very prestigious Indian Institute of Technology, Kharagpur, India.  She says her life turned for better when she married Keith and bought her 100 acres farm in Australia.  Although a steep learning curve for her to develop a lifestyle living

on the farm, she has done well considering she had never seen an olive until she came to Australia and planted her own olive grove. Her knowledge of spices and her passion for cooking has laid the foundation for the Nuja’s award-winning Infused Olive oils and other products such as Table Olives, Dukkah and Salad Dressings.  She is a natural behind the stove.  She is articulate, friendly and loves to share her hospitality.  Please enjoy watching her very first cooking shows demonstrating the use of Nuja’s range of Infused Olive Oils and she would love to hear from you ones you’ve used them as well.


Chicken Spaghetti with Chilli & Garlic Infused Oil

To simplify cooking a tasty spaghetti sauce using juicy chicken tenderloins, Tanuja demonstrates the use of Nuja’s Chilli & Garlic Infused Olive Oil.  Cooking time could be anywhere up to 45 minutes as it is important for the sauce to simmer for best results.



  • 500gms of Fetuccini or any other kind of Pasta or Spaghetti

  • 3 – 4 Table spoons of Sathya Extra Virgin Olive Oil

  • 2 – 3 Table spoons of Nuja’s Chilli & Garlic
    Infused Olive Oil

  • 650 gms of chopped chicken tenderloins

  • 250 gms of chopped onions

  • 300 gms of chopped green peppers

  • 200 gms of chopped mushrooms

  • 400 gms of fresh tomatoes blended into a paste

  • 2 – 3 tablespoons of pesto sauce made with fresh basil, pine-nuts and some grated cheese.

  • One wine glass equivalent of red wine

  • 3 – 4 tablespoons of sour cream

  • 2 teaspoons of salt or to taste

  • 1 – 1 ½ teaspoons of sugar

  • 1 – 2 table spoons of lemon juice

  • Grated Parmesan Cheese to sprinkle over the spaghetti after it has been plated

Steamed Broccoli and Garlic Bread

“Simple food is made even simpler and tastier by using Nuja’s Infused Olive Oil”, says Tanuja. 

Steamed Broccoli is recommended by most dieticians, however it can be quite boring to eat, but not when you use the marinate like the one Tanuja demonstrates in the video.  Preparation time is less than 10 minutes, the time it takes to steam broccoli.


Garlic bread is a no brainer when you use the warm Turkish bread with Nuja’s Garlic Infused Olive Oil, Nuja’s Dukkah and some grated cheddar cheese. Preparation time is less than 10 minutes.

Ingredients for Garlic Bread

French Toast with Garam Masala Infused Oil

Sounds very strange but you have to try it before you pass any judgement.  It takes less than 10 minutes to make this dish.



French Fries and Sauteed Prawns with Infused Oil

French fries can be either beer-battered as demonstrated in the video or can be plain.  The time it takes is dependent on the oven to crisp the French fries.  Sauteed Prawns can be made either with Nuja’s Lemongrass & Ginger Infused Olive Oil as demonstrated in the video or can be made with Nuja’s Garlic or Nuja’s Chilli & Garlic Infused Olive Oils depending on your preference for flavours. The time it takes to cook the prawns is less than 10 minutes.
